ZJJ Knocking wine, not only its name is interesting, appearance also is very special. Its colour and lustre is clear and light yellow, with a slight fresh sweet bamboo fragrance. Its role process is also very fastidious: spring, is the vigorous growth period of bamboo, tujia people will be making good rice wine into the bamboo, let the synchronization between fermentation process and bamboo growth process, thus letting bamboo fragrance and bouquet become one body. Every one in the bamboo should experience spring, summer, autumn, until bamboo′s basic form, and then cut down and store in cellar, waiting for future drinking.

The openning method as follows: before drinking, firstly to knock a hole in the top of bamboo, and pour into the cup. It is a very unique way. The openning method of wine is given priority to knock, for different stroke numbers have different meaning: a knock welcomes a sight for sore eyes, two means the customer drinking too much, three says to become sworn brothers.
