ZJJ Tujia blood cake is a kind of local food that mixes bean curd, pig blood with shop fat, adds flavorings and then fumigated by firewood.

Right before or after the Spring Festival, Tujia people would like to cook some blood cake graciously as long as distinguished guests drop in. Blood cake not only maintains the faint scent of bean curd, but also the taste of pepper and preserved savor. One piece may lead you to endless aftertastes.

Usually, housewives make a piece of bean curd in advance, using fresh soybean. While killing a pig, they use a small basin to store the blood that has been left within the pig’s body. Then, grinding pepper into powder and cutting shop fat into pieces standby application. Next, finding a big basin to contain the bean curd and crumb it completely.

When putting in the pig blood, extra cautions should be paid. Since too much or too little may screw it up. After stirring all the materials fully and moulding them into a ball. Finally, letting it be fumigated on the heated brick bed. After about half a month, the bean curd with pig blood will become tight and black. If you have chance, maybe you can have a try.
