Zhangjiajie Food-Mildewed Tofu is ZJJ people’s daily dish. It looks ugly but tastes good and is appetizing. In springs and winters, people would like to make it. And its making process is quite dainty. The first step is to slice tofu into pieces of about 2cm wide and 3cm long. Then, boil it in clear water, drain it and put it in a barrel in which it will mildew. Take it out when mucedine grows as long as about 3cm. Later, soak the tofu in cold oil soup and add salt in a jar,Sichuanpeppercorn, ginger slice, pepper ends and a small amount of white spirit. In the end, seal the jar up. 7 days later, you can open the jar and eat it. It tastes quite savoury, spicy, numb and appetizing.
