Smoked Pig Head is Tujia people’s special food which is served as the biggest dish during spring festival. And washing pig head has become a custom of Tujia people. Every year, on the twelfth month of the lunar year, every family would clear dust and shave pig hair of the smoked pig head which has been hung on the beam of house and steam it in the evening.

The Smoked Pig Head is a necessity during spring festival for Tujia people. And a pig head could make into nine kinds of dishes like pig tongue, pig ear, pig mouth, pig face and so on. It is really a great creation of Tujia people.
